well, maybe a little beach fun...just maybe.




we had a ton of fun at starvation reservoir for the atherley family vacation. bayli got braver on the catamaran. chase was able to take short rides and have a little fun on the boat. he mostly liked running down the beach and playing in the sand. it was a fun getaway with yummy food.

get that cricket

bayli and her friend shae were trying to catch "crickets" (aka grasshoppers).
bayli loves catching bugs of all kinds. she has her nervousness, but does pretty well.
i don't know how shae is normally with bugs, but her response was totally funny. she was pretty content with bay doing the catching, while she coached her along.

i love these pics of bay with her catch.


chase got in on the action, but soon found that he didn't care much for those unpredictable little creatures. especially when they were on him.

a little share

by popular demand,
i now present:
stuffed green peppers

















6 medium green peppers
-core and boil for 5 minutes

Mix together:
1 1/2 lb ground beef
1 1/2 c cottage cheese
3 T chopped onions
3 T minced celery
2 beaten eggs
1 1/2 tsp salt
3/4 tsp pepper

gently stuff the peppers with mixture
(i save a little of the mixture to stuff later)

slice the now stuffed peppers into 1 inch rings
(i usually end with 2-3 slices per pepper)

carefully place in greased baking dish (9x10)
(use the extra mixture to re-stuff)

2 1/2 c tomato sauce (i use 2 8 oz cans)
poor over peppers

bake for 45 minutes at 350 degrees (uncovered)

top each pepper slice with 1 T sour cream
heat for 10 minutes more

there you have it, enjoy these lovely yummies.
